Skip the ham for your spring holiday brunch or dinner

For holiday meals, don’t be afraid to go with a nontraditional menu. Remember, not everyone has to be concerned about potassium and phosphorus, but here are a few suggestions for anyone trying to keep an eye on these minerals for their kidney health, as well as trying to keep sodium lower.

Kidney healthy alternatives for Easter holiday meals:

  • Instead of ham, which is salty, choose lamb, roasted pork, turkey, roast beef, or chicken.
  • Instead of potato salad, try pasta or macaroni salad.
  • Instead of mashed potatoes, try rice or noodle dishes instead.

NOTE: If you are going to select a dish made with potatoes, you’ll want to leach the potatoes to lower the potassium content. Simply peel and dice them, and soak in a large pot of warm tap water 2-4 hours, then drain and make according to your recipe!
